Great Autumn Slow Cooker Recipe!

It’s that time of year when the wind is whipping, the snow is falling, and there is nothing better than walking into the house after a long day to the smells of dinner in the slow cooker!  Here is a recipe that we just love…hearty, filling, delicious, and easy!  Comfort food at it’s best.  Plus, it takes one of the least expensive cuts of beef and turns it in to a treat…great for those watching their pocketbooks (and who isn’t?!).  Remember, it IS possible to overcook (and dry out) meat in a crock pot, so cook on low for 6 hours (or use an auto-off crock pot). When accepting the raves from your family, give a little thanks to Martha Stewart (which is where we got the recipe!).

Ingredients:

1 large thinly sliced yellow onion

2 garlic cloves, smashed and peeled

1 first cut of beef brisket (4 pounds), trimmed of excess fat

Coarse salt and ground pepper

2 cups low-sodium chicken broth

2 tablespoons chopped fresh parsley leaves, for garnish

Directions

  • In a 5- to 6-quart slow cooker, combine onion and garlic. Season brisket with salt and pepper and place, fat side up, in slow cooker. Add broth. Cover and cook on high until brisket is fork-tender, about 6 hours. Remove brisket and thinly slice against the grain. Serve with onion and some cooking liquid; sprinkle with parsley.
