Here is a recipe that we just love…hearty, filling, delicious, and easy! Comfort food at it’s best. Plus, it takes one of the least expensive cuts of beef and turns it in to a treat…great for those watching their pocketbooks (and who isn’t?!).

1 large thinly sliced yellow onion
2 garlic cloves, smashed and peeled
1 first cut of beef brisket (4 pounds), trimmed of excess fat
Coarse salt and ground pepper
2 cups low-sodium chicken broth
2 tablespoons chopped fresh parsley leaves, for garnish
